Raising horses for meat requires a lot of attention and care from small-scale breeders who provide an optimal environment, resulting in better quality meat. Horse breeders often describe the animals as demanding, as they have specific dietary preferences.

    The largest cut of meat comes from the thigh of the horse, called round. It’s divided into the inner and outer round, with the inner round being of slightly better quality and less fatty. You can use it to prepare steaks and roasts, you can even bread it and fry it or use to prepare tartare, although the tenderloin would be an even better choice for the latter.
  2. CHUCK
    Horse chuck is great for preparing roasts or goulash. For other dishes, we recommend using other cuts of meat.
  3. RIB EYE
    The rib eye is a versatile and essential cut that can be used to make a variety of delicious dishes, like steak with onions. It is also great for grilling or breading and frying. The meat has a rich texture as it is slightly fatty, resulting in juicier dishes. For those who have some extra time, we recommend using the rib eye to prepare roasts or goulash.
